This week Nanny Pat swapped her day out and about in Cornwall for a cosy day in with her granddaughter. They spent the day baking an old favourite – Gingerbread people!
Cooking with kids can be great, if a little messy – but that’s all part of the fun, just like our love of mud and wellies!
Meg loved stirring in the cinnamon and seeing the mixture go golden brown.
The second best bit was decorating the people after they came out the oven….we think one of these is Farmer Dave – any guess which one?
And the best bit of all? You guessed it – the taste test!! Approved!
Another one of Nanny Pat’s favourites is her old family recipe for Lemon Icicle, why not try it out?
Bosinver Lemon Icicle
1/2 pt double cream
2oz digestive biscuits
3 eggs
4oz caster sugar
Grated rind and juice of 1 lemon
Thickly butter loaf tin and sprinkle with crushed biscuits.
Whisk egg whites until stiff. Gradually add sugar, beating well after each addition until mixture is very stiff.
Whisk cream with egg yolks and fold evenly into the whisked whites, then add lemon juice and rind
Pour into tin and freeze.
Remove from freezer 10 minutes before serving.
Yum yum!
We have entered this 3 egg recipe into our friend Hedgcomber’s cookbook competition “Project Egg”. The idea is to gather original recipes and produce a little cookbook which would be the place to go to for an egg-busting recipe when our laying hens have gone into overdrive! Why not give it a go yourself?
