Making the perfect cupcakes at Phileigh Way Cookery School

I’ve written before about my culinary adventures at Philleigh Way Cookery School, run by brothers in law.James Martin and George Pascoe on the Roseland Peninsula.

Recently I attended one of their cupcake cookery courses with a group of girl friends and thoroughly enjoyed the day with talented tutor Christine Hawker. This course is an excellent gift idea for a friend’s birthday or a fun session for a hen party!

After meeting Christine and enjoying a morning cup of tea, Christine talked us through some of the different flavours of cupcake including chocolate chip, vanilla and white chocolate chip, lemon and poppy seed and red velvet before giving a practical demonstration.

We got baking ourselves and then settled back while our batches cooled, to discover some clever decoration and icing techniques, including learning how to make sugar flowers and chocolate shapes — Bake Off beware!

After another tea break we all threw ourselves into decorating our cupcakes — with varying degrees of success! It was a wonderful day, full of laughter and we learned a lot.
